The journey
We work with four families on the slopes of Doi Chaang, each tending less than two rai of arabica. No middlemen. We pay above fair-trade price, agree on harvest dates together, and fly up to collect ourselves twice a year. The bean tastes like the place it came from — jasmine, stone fruit, a cool highland morning.
Single-origin lineupOur Probat drum lives in a converted shophouse on Nimman. We start the burner at 05:30 — before the city wakes — so the beans cool by 07:00 and the first bags are sealed before noon. Roast date is printed on every bag. We don't stockpile. We don't roast speculative inventory. You order; we roast.
Roast levels explainedPeak flavour window: day 7–21 off-roast. We include a brew card with every order — three recipes optimised for the specific bag you received. Whether you pull espresso, pour a V60, or press a French press at the guesthouse, you're tasting exactly what we intended when we dialled in the profile.
